2 cups uncooked sushi rice
3 cups water
½ cup rice vinegar
1 tbsp vegetable oil
¼ cup white sugar
1 tsp salt
STEP 1
Rinse rice in a seive under cold water until the water runs clear
STEP 2
Add the rice and water to a sauce pan over a medium-high heat and bring to the boil. Reduce heat to low, cover, and cook until rice is tender and all water has been absorbed. This will take around 20 minutes. Remove from the heat and allow to cool so that it can be handled.
STEP 3
Meanwhile, combine the rice wine vinegar, vegetable oil, sugar, and salt in a small saucepan over a medium heat. Cook until the sugar has disolved then allow to cool. Once the rice is cooled, pour over the rice and stir. The mixture may appear very wet at first, but will soon dry as it cools further.
