Serves 4
STEP 1
Put pasta on to cook as per packet instructions
STEP 2
Boil ketttle. Once boiled, pour in to a pan and add the peas. Bring to a simmer for a few minutes.
STEP 3
Once simmered, put ⅔ of the peas in a food processor along with the parmesan, some lemon juice, crème friache and a splash of of the reserved cooking water. Blend until relatively smooth.
STEP 4
Once blended, add the remainder of the peas, add salt and pepper to taste. Add more lemon juice if desired.
STEP 5
Combine the sauce with the cooked pasta and serve.
