Serves 4-6
STEP 1
Boil and salt water for pasta
STEP 2
Put the oil in to a pan and set over a medium heat. Add leek and sauté for 8 minutes until softened. Add the garlic and cumin and fry for another 2 minutes. Add pasta to boiling water.
STEP 3
Add the lentils, passata, sundried tomatoes and olives. Simmer for 15 minutes until thickened, seasoning well
STEP 4
Drain and divide pasta between bowls, top with sauce, sprinkle with parsley and drizzle with extra virgin olive oil.
