Serves 4
STEP 1
Add the rice to a pot with a lid with 450ml water and bring to the boil over a high heat.
Once boiling reduce the heat to very low and cook, covered for 12-15 minutes or until all the water has absorbed and the rice is cooked.
Remove from the heat and set aside with the lid on to steam until ready to serve
Or cook the rice as per this recipe.
STEP 2
Whilst the rice is cooking, cut the beans in half.
STEP 3
Peel and finely chop the ginger and garlic
Trim and slice the spring onions keeping the white and green separate.
Grate the apple with skin on in to a large bowl
STEP 4
Add the mince, chopped ginger, spring onion whites, soy sauce, toasted sesame oil and brown sugar to the grated apple and mix.
STEP 5
Heat a large frying pan with the vegetable oil over a high heat.
Once hot, add the mince mix and the green beans. Spread the mixture out and cook for 4 minutes without stirring.
STEP 6
Flip the mince and cook for another 4 minutes on the other side
Once cooked, break up the mince in to rough bite sized pieces.
STEP 7
Add most of the spring onion greens to the cooked rice, season with salt and pepper as desired
STEP 8
Serve and garnish with the remaining spring onion greens
